Having a hard time with meal ideas....PLEASE HELP

I had RNY on Feb 10th and am on the general diet. I am having such a hard time coming up with meal ideas. I hope someone can please help me. We love chicken and hamburger..no fish or sea food at all.

Please help me...................... Thanks a bunch.

Also does anyone have any good websites with good recipes to share as well!

I've always got ideas...  if you're into hambuger, i've got one of my old recipe posts that have a hundred different ways to fix a gourmet burger...or Low Carb hamburger hash..  r how about a quiche....lots of things you can do with quiche....  ricotta baking or ricotta desert....also near zero low carbs...

Soups...?  Millions of them...frittatta....jut another egg idea...  chicken is the supremely easy thing to work with, tons of my recipes in previous pages....  if I knew some of your likes/dislikes I could make a recipe on the fly for you....  Just know that there are tons of options for the WLS patient and their family....

I cook gourmet meals often for just that type of person who needs it.

How very kind of you! Do you have a file you could send me with all your recipes? We love burger, haven't ever had quiche but open to it :) Love soups as well. We love chicken as well.

We aren't big spinach eaters and the simpler the recipes the better. Also love working with the crockpot & grill :)

T’s Grilled Coconut Ginger Chicken

So if you want your guests and family to go nuts for your cooking and to keep them from going to the fast food joints that are killing us, then just give this a try….everyone raves about this stuff….

1 lb skinless boneless chicken breasts

1 cup coconut milk

2 cloves garlic, crushed

1 tsp. Red Curry Paste

1 tbsp. chopped FRESH ginger

1 tbsp. Kikkoman soy (don’t substitute a different soy sauce…seriously it affects the taste BIGTIME)

1/2 cup chopped cilantro

Pinch of cayenne (optional)

 

Directions:

(read below for your options of skewers or no skewers before you cut the chicken)

Cut the chicken into thin strips, about 1/2 inch wide and 4 inches long. Place in a medium bowl or a plastic bag.

In another bowl, combine the coconut milk, garlic, curry paste, ginger, soy sauce, and cilantro. Combine with the chicken strips. Cover and marinate in the refrigerator at least 60 minutes or overnight.

(optional)Buy some skewers and hey if they are made of wood then presoak 12 bamboo skewers in cold water for 30 minutes. Weave the chicken strips onto the skewers.

If you don’t want skewers, then don’t cut the chicken….so there ya go!

Grill the chicken skewers over a hot barbecue for about 2 minutes on each side. Serve with peanut sauce.

Note: if you don't have a barbecue, cut the chicken into 1 inch (2.5 cm) cubes instead of strips. After marinating, place the chicken cubes on a baking sheet in an oven preheated to 425F (22C), and bake for 17 minutes.

Serves 4

Low cal, LOW carb about 3 carbs per serving, LOW fat 2 gm/serv

 

Always add or subtract what you think you’d like….  So if you’re gonna skewer this, then do a griiled veggie kebob to help balance the family’s needs for more side items that is still healthy.  I cook these often!

Rosemary-Sage Pork Chops

Saturated with the flavors of rosemary and sage, these pork tenderloins are a quick interpretation of the popular porchetta found throughout Tuscany and are served at room temperature. Leftover pork can be used in sandwiches or salads.

Ingredients:

1 Tbs. olive oil

2 Tbs. chopped fresh rosemary

2 Tbs. chopped fresh sage

1 Tbs. fennel seeds, crushed

1 1/2 tsp. kosher salt

1/2 tsp. freshly ground pepper

2 pork tenderloins, trimmed, about 1 1/2 lb.
  total

4 garlic cloves, quartered lengthwise

4 thin slices pancetta

For the fried capers:

1/4 cup capers, drained and patted dry

1 Tbs. fine cornmeal

1/2 cup olive oil

Sea salt, to taste

Directions:

In a small bowl, combine the olive oil, rosemary, sage, fennel seeds, kosher salt and pepper and mix well. Using the tip of a sharp paring knife, make 8 crosswise incisions 1/2 inch deep evenly spaced along the length of each tenderloin. Insert a garlic quarter into ea*****ision. Rub the rosemary-sage mixture over the tenderloins. Wrap 2 slices of pancetta around each of the tenderloins in a spiral pattern. Place the tenderloins, side by side, in a baking dish. Cover tightly with plastic wrap and refrigerate for at least 24 hours or up to 2 days.

Remove the pork from the refrigerator and let stand at room temperature for about 1 hour before roasting. Preheat an oven to 375°F.

Transfer the tenderloins to a small roasting pan and pat dry with paper towels. Roast until an instant-read thermometer inserted into the thickest part registers 150°F, about 30 minutes. Let cool to room temperature. Remove the pancetta slices and finely chop them. Set aside. (The pork can be prepared up to this point 1 day in advance. If doing so, cover with plastic wrap and refrigerate along with the chopped pancetta until 30 minutes before serving.)

To fry the capers, in a bowl, toss the capers with the cornmeal until lightly coated. In a nonstick fry pan over high heat, warm the olive oil. When it is hot, drop in the capers and fry until golden, 1 to 2 minutes. Using a slotted spoon, transfer to a plate lined with a paper towel to drain. Lightly sprinkle the capers with sea salt.

To serve, thinly slice the pork and arrange on a serving platter. Scatter the fried capers and pancetta over the pork slices. Serves 8.

Tarragon Chicken

Serves 4

 

8 bone-in, skin-on chicken thighs

3 shallots, cut in half

6 strips of bacon, roughly chopped

4 large bay leaves

salt and pepper

zest from ½ lemon

1 Tablespoon of Olive Oil

 

Tarragon sauce:

2 tablespoons grainy mustard

1/2 cups white wine

2 large bunches tarragon, chopped (fresh tarragon is so awesome!)

1 teaspoon Olive oil, mix with lemon zest

 

Preparation:

Preheat oven to 375 degrees. Salt and pepper the chicken thighs and place them in a large baking dish. Add the bay leaves, and then the bacon. Place the shallots in between the thighs and bake for 40 minutes. Coat chicken with olive oil lightly.

 

Meanwhile, mix the white wine, mustard, teaspoon olive oil, and tarragon together and coat the chicken liberally with the sauce (after the chicken has cooked for the 40 minutes as listed above, place back into the oven for 10 more minutes.

 

Serve while hot.  Broccoli and cucumber salad (on the side) make this dish amazing….

Not enough carbs in this to worry…so my guess would be able 3 carbs per serving….if it’s 5 who would care?  It’s all about living the good life while losing weight…..  I’m skinny and I eat better than anyone I’ve ever seen…. Surgery and the ultimate prepared food choices make it the easiest plan.  If you want to start, give me a shout, I’m always willing to help!

That should get you going....  there are a billion great ideas for you...  don't be afraid to try something new and creat things that you feel like you want.  As for me, I'm a guy....just some bacon sounds nice...  but honestly there are moments that I want something extraordinary....so I reach in my bag of trix and I produce some of the finest things made for humans...  There's nothing special about my ability to cook and figure out how things taste....  I've ruined a lot of dishes just trying to make them better...  so don't be afraid to just think about the"different" choices you can make....

Desserts?  Ricotta is your WLS best friend...  i eat it 3 times weekly...

Breakfast but sick of eggs?  Flax meal hot cereal called "flax-z-snax from a lot of different online stores....mix splash of cream, fresh fruit, and a pat of butter and it's heaven and TONS of fiber and so good for you!  Just try a few new things....

Mr. T has wonderful recipes and you will find more on this forum.  You can look at previous pages.  Also check out Theworldaccordingtoeggface.com .  She has a lot of ideas and recipes.  She has recipes for quiches made in a mini muffin pan.  You can put them in the freezer and then pop out 2 or 3 when you want them.  She has all kinds of different recipes for them.
